Veggie quinoa salad recipe

I’m very proud of myself because it’s the first time that I come with a recipe. I normally don’t have any imagination when it comes to cooking so today is a big day!!!

Believe me or not, I was inspired by the beautiful weather in London (the first day of summer?????) and therefore wanted to eat something refreshing but new. And this is how I came with the idea to make a veggie quinoa salad.

As usual, this recipe is extremely easy to make but nonetheless delicious!

Ingredients (for 1 person as a main dish):
-Quinoa: 80g
-Sundried tomatoes: 6
-Avocado: half
-Pine nuts
-Goat cheese: 3 slices
-Mint: 10 leaves
-Olive oil: 4 tablespoons
-Lemon: 1 tablespoon
-Balsamic vinegar: 1 tablespoon
-Honey: 1 tablespoon

-Make the quinoa: First, wash it thoroughly to remove any impurities. Then, put it in a pan with 3 times the amount of cold water (so 240g or ml of water). Bring it to boil and then reduce the heat and simmer gently until cooked and all the water has been absorbed.

While the quinoa is cooking, you can start cutting:
-Cut the avocado
-Cut the sundried tomatoes
-Cut the goat cheese
-Cut the mint (with a pair of scissors)

For the dressing:
-4 tablespoon of olive oil
-1 tablespoon of basaltic vinegar
-1 tablespoon of liquid honey
-1 tabspoon of lemon juice

Once the quinoa has cooled down, add the dressing and mix. Then add all the cut ingredients and mix again.

You can now put the salad in the fridge for later or eat it on the spot.

I hope that I will come with new ideas like this more often. We’ll see!
